Here is a tasty appetizer to bring to your next beach party! This combo packs in some healthy unsaturated fats(avocados) and protein(shrimp) that would appeal to any low carb diet! Of course you may have to schedule it for a “diet break” day. You can’t do salsa without tortilla chips!
Here are some ingredients to get you started on your salsa!
- 1/2 lb med. shrimp, peeled and cooked
- 2 small avocados, peeled and coarsely chopped
- 2 plum tomatoes, seeded and chopped
- 2 tbsp minced red onion
- 1 tbsp fresh lime juice
- coarse salt to taste
- 32 baked tortilla chips
Tossed in a medium bowl and served at room temperature, this tasty item can be quick and easy! Try adding jalapenos, cilantro, or pico de gallo.
